Laid Back Day And A Look Back

Eggnog French ToastThe clouds cleared out and today was another beautiful day. We slept in really late for us – almost 8:00. We haven’t had many sleep in days lately. We had no one leaving today and the only one coming in was in the afternoon. We got a slow start to the day and decided to try a new recipe for French toast for breakfast. Max just made it up (two eggs, eggnog, pinch of salt and sourdough bread.) We bought some eggnog last week to use in our hot chocolate. Max decided to use it for French toast. It was really good.

We spent a lot of time yesterday on family estate business and after sending out some emails late yesterday we got some calls this morning so we again spent a good part of the morning on family estate issues. After that we went to Lowe’s and were able to pick up some things we needed for Jackie’s house and the made a Walmart stop for groceries. A really nice grocery store is something we have not found here in Lumberton. There is no Publix, Kroger, Whole Foods, Sprouts etc. We have found an IGA, small Aldi and the Walmart Market which is across the street but we do miss our Publix. We then returned to Fred to greet our incoming NOMAD, Joanne. Max and Cindy helped her get parked and then we did some walking. We also had some NOMADS new member applications to handle this afternoon. It was a real laid back sort of day.  For our main meal today we made instant pot pot roast.  Our first time to give this a try and it also was quite good.  Good eats.

Since we didn’t have much of interest, we thought we would share what we were doing 2 years ago today in another part of North Carolina which is beautiful this time of year, Hayesville, NC at the Hinton Rural Life Center.
